Mini Chocolate Chip Cookies!

Hi There!

Yesterday I have a cookie craving (we all have them) and I decided to make mini chocolate chip cookies. Just classic chocolate chip cookies are needed once and a while. Only I didn't have any normal chocolate chips...so I used mini ones. There were quite a lot of them actually and they made delightful cookies. Here's the recipe:

Ingredients:

Pre-heat oven to 375

1 bag (10 oz) of mini chocolate chips. (I used the Enjoy Life brand)
2 1/4 cups unsifted white flour
1 tsp baking soda
1/2 tsp salt
2 sticks of slightly softened butter (unsalted)
3/4 cup sugar
3/4 cup brown sugar (packed)
2 eggs
2 tsp vanilla extract

Prep and Baking:

Combine the flour, baking soda and salt in a medium bowl. Set aside. In a large mixing bowl, beat the butter and sugar until creamy. Add the eggs and vanilla, mix until combined. Slowly blend the dry mixture into the cream mixture. Stir in the mini chocolate chips. Line 2 baking sheets with parchment paper. Use about 1 tbsp per cookie. Bake for 9-11 mins. Eat alongside a good book and maybe a bit of vanilla ice cream.

Double Cookie Smoothie! (Uh...shake)

Hi Again!

Sorry I haven't posted in a while, I haven't had time to bake anything lately.
But I have a SUPER delicious recipe for you! Double Cookie Smoothie! OK...so, it might resemble a shake in every way...but it's a smoothie, I swear! Pleas believe me! Well, even if you don't get the smoothie part, you will get the delicious part! Last night I was in the kitchen thinking, when my brother came up with this great idea for a cookie smoothie. We gathered ingredients, and got to work!Sorry, I don't have any pictures, it was devoured WAY to quickly to snap photos!  Want to make it too? OK, here you go!

Ingredients:

(you will need a blender for this)

 4-6 scoops of cookie dough ice cream (I used the Bryers ice cream brand, also you can add more or less ice cream if wanted/needed)
Milk as needed to thin it out (it depends how thick/thin you want it)
 As many Oreos as pleases you! I used like 5-7 but you could use more or less, depending on how much you like Oreos. This is kind of a guesswork recipe, you can use however much you want/need.

Prep and Making:

Scoop the ice cream into the blender. Wedge in Oreos and try to poke them to the very bottom so that they get evenly blended. Add a splash of milk. Blend up. If it is too thick for your liking, add more milk. If it is to thin, add more ice cream. When it is the right consistency for you, pour into cups and serve!

This is perfect for a quick summer-y treat!

Fabulous Snicker doodle cookies....

Hi,

Today I made Snicker doodles with my (3 year old) cousin. It is rather hard to bake cookies with a toddler (because he likes putting his mouth on things and pouring stuff into stuff) but I still had fun:)  I hope that you find these cookies as wonderful as I do.

Ingredients:

2 sticks butter (softened)
1 1/2 cups coconut sugar
2 eggs
1 3/4 cups whole wheat pastry flour
1 cup all purpose flour
1 tsp cream of tartar
1 tsp baking soda
1/4 tsp salt
2 tsp vanilla
2 tbsp cinnamon (for rolling the dough in)
1/2 cup sugar (also for rolling)

Prep and Making:

Mix the dry ingredients together.  In a separate bowl cream the butter and sugar then add eggs one at a time.  Add vanilla. Add dry ingredients. Mix all together.  Preheat the oven to 350. Chill dough for 30 minutes. While the dough is chilling mix the sugar and cinnamon together in a small bowl. When dough is done chilling roll into small balls and roll in sugar mixture. Bake for 8-10 minutes. Cool then eat.

Good Nut-Free treats....

Hi,

I have some recommendations for some great places/companies to get nut-free treats. But they are also just delicious so anyone could enjoy them.

First: Vermont Nut Free Chocolates. They have great chocolate and I very highly recommend you check them out. If you can't have M&M's like me then they have Skippers which are like M&M's only a bit bigger and better quality. Go to their website @: http://www.vermontnutfree.com/

Next: Enjoy Life. They have cookies and trail mix and other snacks. They are not only nut free but free of the top allergens too! You would think that they might not taste so good because they are free from all that stuff but they are actually really good! The dancing cupcakes.........

 Hi,
Sorry I have not posted in a while.....it has been super busy with the holidays and such. Ok so today for dance class we are having like a little party and parents get to come and watch.......anyway I made cupcakes to bring. There is a lot of people and I didn't want to make two batches. The recipe turned out to be enough for around 18 cupcakes......we only had two muffin pans....so we kind of used this flower shaped cake pan and put the cupcake papers in there.....some of our cupcakes came out well......lopsided. They still taste great! For the recipe go to my hersheys chocolate cake recipe and use that to make them like cupcakes......accept thist time bake them for around 20-25 minutes. Here is a picture of my (lopsided) cupcakes...............

The French Toast Disaster :)

Hi,

This morning I was craving French toast so I set out to make some. I made my brother 2 pieces and then I started on mine. I reached for the cinnamon to put some in. I poured the cinnamon in and a whole bunch came out. I was thinking, "that was funny, only a little bit is supposed to come out". Then I noticed that the cinnamon was kind of red so I looked at the bottle and it wasn't cinnamon!!! It was cayenne red pepper!! YIKES!!!!! I had to start ALL over again!!!!!!!! But my french toast was tasty! So, I bet you want french toast (without cayenne pepper) now, so, I will post the recipe I made this morning.

Gingery - Cinnamon French Toast:

Ingredients:

1/2 cup milk
2 eggs
1 tsp ground cinnamon (not cayenne red pepper)
1 tsp  ground ginger
bread(use as much bread as the person you are serving wants pieces)
butter for the pan
maple syrup (optional)
powdered sugar (optional)

Prep and Making:
Pour the milk into a small pie pan.Crack the eggs into the pie pan and whisk them in. Sprinkle in the cinnamon and ginger. With a fork, take a slice of bread and plop it into the pie pan and let it soak in. Turn it over and let soak in. Put a frying pan on the stove and turn in onto medium. With a knife, take a slice of butter and spread all around the pan. Put the bread into the pan and cook it until brown, then flip it over and do the same for that side. Take it out of the the pan and transfer to a plate. Pour syrup on and sprinkle powdered sugar. Repeat for the other pieces.

Cocoa-Strawberry smoothie.

GO COCOA-STRAWBERRY SMOOTHIE!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

so yeah you get I am kinda obessed with this smoothie[my brother did not like it very much which I found difficult too understand] but I just had to post the recipe so other peeps could share in my happiness. you should deffinently try this smoothie A.S.A.P!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
I really have been craving a smoothie for like 3 or 4 days so this afternoon I begged my mom too make us a smoothie with strawberry and cocoa. so yeah I get my smoothie and you get the recipe and we are all happy :)  if you like strong chocolate things then you will love this smoothie but if you like more sweet and less strong stuff then I would stick to other smoothies.I have to go to the library now. so here is the recipe:

Ingedients:
take out the blender.

1 frozen bannana.
1 cup of frozen strawberries.
2 tbsp unsweetened cocoa powder.
1 tsp vanilla extract.
1 cup or so of whole milk yogurt.
1/2 a cup of milk.
maple syrup to taste.
2 tbsp of cold pressed coconut oil.

[When the smoothie was made we kinda estimated how much we put in so if you think it needs more or less of something feel free to try.]

Prep and Making:

cut up the bannana and put it in the blender. dump in the strawberries. pour in the milk and yogurt. put in the cocoa. pour in the vanilla and maple syrup. pour in the coconut oil. blend on high until blended up. pour into glass and drink.
